Super Bowl LVII Food and Drinks


Most years I watch the Super Bowl and have to go to work the next day, and I usually work the day before and sometimes the day of the Super Bowl.  This year I have a long weekend off, Saturday through Monday.  So this year we are going all out and doing some different things for the Super Bowl.  I wanted to go up-scale and hearty with steak and potatoes with creamed corn.  


For appetizers we fried some fresh mozzarella cheese balls.  They were coated in seasoned flour, egg wash, and then panko and fried in peanut oil.  These cook very quickly and only need like 30 seconds to cook.  Our friends who we invited over brought some amazing grass fed steaks from the Swamp Rabbit Café.  These were absolutely amazing cooked medium rare! We roasted some potato wedges in the oven that were coated in olive oil, garlic powder, and dry basil.  The beer cheese creamed corn made by cooking a bottle of Extra IPA and reducing it by half.  Then a block of cream cheese was added and mixed in and then corn was added.  It was topped with Fontina and Gouda that was crisped up in the oven.  We also cooked some zucchini and yellow squash that I had marinated in a teriyaki sauce over night in the fridge.  For dessert we had crepes with a chocolate cream cheese mousse filling.  


For drinks we had a variety of options and everyone made their favorite.  The drinks included a Daiquiri which was a fresh squeezed lime with simple syrup and white rum shaken with ice.  Another guest had a mojito made with homemade mint infused rum, fresh squeezed lime and club soda stirred with ice.  We also had a strawberry pina colada made with a mixture of pina colada mix and a strawberry margarita mix shaken with ice and white rum.  The last drink that was made was a blueberry bourbon bash made with equal parts of blueberry simple syrup and bourbon.  Ice can be added for those who like their drinks on the rocks.  


As no one at our party had any rooting interest we enjoyed the good plays and commented that every commercial had a celebrity in it and that they could have paid any one of us a lot less to do the same thing!  


The halftime show was kind of a miss as we are not Rihanna fans and we only knew one song.  The Michelin men, or whatever they were, were kinda weird.  We did however enjoy the national anthem by Chris Stapleton.  


All in all we enjoyed spending time with friends even though we called it quits after the third quarter as our friends had to be at work in the morning.  Overall it was a good close game which we enjoyed.
